Recipe: Spaghetti Squash Salad

Hey Everyone!

It has been a while since I have shared a recipe! With my recent discussion about spaghetti squash, I would like to share this spaghetti squash recipe with you. It is easy and takes less than 30 minutes to prepare! If you read my post about spaghetti squash, you will remember how I talked about how simple it is to cook your spaghetti squash in the microwave. This recipe takes full advantage of cooking the squash that way. Check out the recipe below!

Ingredients:

  • one 3 pound spaghetti squash
  • 1/2 pound sliced fresh mushrooms (I use bella or white, but any type will work)
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 1/4 cup grated Parmesan cheese
  • 2 tsp minced fresh garlic
  • 5 Tbsp butter or margarine

Methods:

  1. Pierce squash in several places with a knife like you would a potato.

2. Place squash into microwave directly on disc and cook for 15 minutes. Turn squash with oven mitts on halfway through cooking.

3. Let squash stand for 10 minutes after cooking.

4. While squash is cooking place parsley, olive oil, garlic and 2 Tbsp of butter or margarine in a small bowl and set aside.

5. Saute mushrooms with 3 Tbsp of butter or margarine in a saute pan until cooked.

6. Cut squash in half lengthwise and remove seeds and membrane with fork (be careful of the steam coming from the squash!)

7. Gently pull and separate squash flesh out with fork until you see defined “pasta”.

8. Combine squash and mushrooms in a large bowl.

9. Microwave parsley, olive oil, garlic, and butter or margarine for 1 minute.

10. Pour parsley mixture over squash and mushrooms and add cheese, salt, and pepper.

11. Stir ingredients of salad together to yield final product!

Tips: Make sure you know the weight of your spaghetti squash because this recipe is based on a 3 pound squash. You will need to adjust the other ingredients accordingly depending on the weight of the squash to ensure correct ratios. Feel free to play around with this recipe! I personally love garlic and parsley. Many times I will add more garlic and parsley than this recipe calls for. Have fun, and I hope you find this salad as delicious as I do!

  1. I have not had spaghetti squash in years. I had no idea you could make it in a microwave what a great idea to cut down on looking time. So easy and quick. Perfect fall supper on a busy night!
